It is for all these reasons that I leave this recipe available on my site, even if I now rarely make it. (I also leave some notes of possible substitutions). After all, this banana bread is homemade with essential ingredients, which is already a thousand times better than an overwrapped snack with mysterious ingredients prepared by the food industry, when we say that nothing is black or white!

Ingredients



  • 2 1/2 cups flavor (ripe bananas, carrots, yogurt, etc. - mashed or grated)

  • 2 1/4 cups of a sweetener (white sugar, brown sugar, honey or maple syrup)

  • One tablespoon baking soda

  • 1/4 teaspoon salt

  • One teaspoon vanilla (optional)

  • 4 cups of flour

  • Four eggs

  • 1/2 cup of oil

  • 1 cup buttermilk *

  • 1/2 cup of surprise flavor (chocolate chips, nuts, dried fruit, etc.) - optional




Preparation


1. Preheat the oven to 275 ° F.

2. Line the bread pans with parchment paper and lightly grease.

3. In a first step, mix the flavor of your choice, the sweetener, the baking soda and the salt in a bowl and blend on high speed with an electric mixer for about 1 minute.

4. Pour the eggs and flour in turn, that is, an egg and then a cup.

5. Add the oil and the buttermilk, beat the mixture for 2 minutes, or until it is smooth and homogeneous.

6. Add the surprise flavor without mixing too much, to maintain the beautiful texture of the mixture.

7. Pour the dough into the prepared molds and cook for 2:30.

Tips


* If you like buckwheat, you will love this idea: Just cut 50% of the flour with buckwheat flour. Something to surprise your taste buds!

* You could substitute the fruit puree with yogurt and add the whole fruit as the last ingredient, taking care not to stir too much to keep them intact.

* Collect the residue from the pulp of your fruit and vegetables from your juice extractor. (carrot, beet, etc.)

* To reduce the baking time, use the recipe for your muffins. Watch for cooking, which should be around 25 minutes at 350 ° F

* If you want a more rounded cake, you can add two tablespoons of baking soda. It's up to you to test if you like the taste.

Perfect recipe: If you like rose water, choose plain yogurt and two tablespoons of rose water for flavor. Garnish the top of your cake with pistachio and bake. A real treat!



If you don't have buttermilk


Just add a few drops of lemon juice or white vinegar to a cup of milk to reproduce the chemical effect of buttermilk. One less purchase for the same result!
